Back on that Home Chef meal kick! Entrée salads are my JAM. This is supposed to be a lettuce wrap, but I'm fancy.

Chicken cooked with Sweet Baby Ray's BBQ sauce, butter lettuce, sautéed corn & jalapeño, fresh tomatoes, green onions, peanuts (huh?), and chipotle ranch dressing. OMG the dressing!

Definitely recreating this one!

Made my own pickles and I'm obsessed! So much better than store-bought, not too sweet, not too vinegar-y. They are perfect!

Philly cream cheese used to have a sun-dried tomato flavor that was my favorite! You can't buy it anymore, but you can make it!

8 sun-dried tomatoes
8 oz cream cheese (full or 1/3 less fat)
2 tbsp sour cream or Greek yogurt
2 tbsp chopped fresh basil (or 2 tsp dried basil)
2 cloves garlic, finely chopped (or 1/4 tsp garlic powder

In small bowl, cover tomatoes with boiling water & stand 30 minutes; drain. Chop tomatoes.

In small bowl, mix all remaining ingredients; stir in tomatoes.

Cover & refrigerate 1 hour. (I reuse cream cheese tub for this.) Ta da!

I've started this post 100 times, waiting for the perfect words to type, but I don't have them. I struggled with staying silent because how could I contribute? I'm not an influencer, no one is coming to my accounts for guidance. What is my place here?

I may never understand what it feels like to be Black in America, but that doesn't mean I should stay silent.

The best thing you and I can do is to acknowledge what is happening and be in support of work to end social injustice.

We need to see color. We need to honor it, value it, and work against those that want to bring harm because of it. Let us all continue to spread awareness, and thank you to those doing it more eloquently and articulately than me.

Finally got my hands on @teremana tequila! 🍹Made a delicious People's Margarita!

I deserve it after this super-craptastic day. Started off horribly dealing with food poisoning, then discovered the water line to my fridge leaked all over the kitchen.

All is well now. Back to 100% and leak mischief somewhat managed.
