Easter Kit Kat Cake

I’ve had this cake planned for weeks to bring to work for Easter. I couldn’t wait for them to see my Easter Kit Kat Cake. After my cousin posted a similar cake on Facebook, I thought it was the cutest ever. Almost too cute to eat! The inspiration for this cake came from one that had M&M’s as the topping. You could really almost use any candy bar you like as the outer edge, and top with any candy you like! For Easter, I thought it would be fun to make it look like an Easter basket. I colored some coconut and sprinkled the top with Cadbury Mini Eggs.

So, how’s it taste?

I used a box cake mix for this to make it super easy. My favorite box mix/tub combination is yellow cake with chocolate frosting. Feel free to make your cake and icing from scratch. You’ll need enough for a two-layer, 8″ or 9″ cake. Any flavor combination would work for this treat. Strawberry, coconut, German chocolate. Whatever you feel like pairing with a Kit Kat! My coworkers loved it. It was so pretty, no one dove into it like they usually do. I finally had to be the one to make the first cut. It was as delicious as it was pretty. Sure to be a hit at your Easter shindig!

Ingredients:

your favorite cake
your favorite icing
22 (.49 oz. size) Kit Kat bars (I bought 3 packs of 8 of the snack size)
sweetened coconut flakes (I used about 1/3 to 1/2 of a 14 oz. bag)
green food coloring
Cadbury Mini Eggs
ribbon

Directions:

1. Bake your favorite cake recipe for a two-layer, 8" or 9" cake. (For this cake, I used Duncan Hines yellow cake mix.) Make sure to even out your layers so there's some room left at the top for your coconut.

2. Frost with your favorite icing. (For this cake, I used Duncan Hines chocolate icing.)

3. Press the Kit Kat bars around the cake gently.

4. Place the coconut in a zippered plastic bag. Add drops of green coloring (I used 4) and close the bag. Shake until the color blends evenly. Add more coloring if necessary.

5. Sprinkle the coconut over the top of the cake. Add the mini eggs.

6. Tie a ribbon around the Kit Kat bars.

    I love this! So cute, and actually easier than it looks. I have a TON of left over toasted coconut from a pina colada cake recently, so I may have to try this. How is it to cut it? You take off the ribbon first right? But do you cut through the Kit Kats?

      Yep, take the ribbon off first. It’s pretty easy to cut as the Kit Kat bars are only two pieces together, so I cut a slice between them. It makes for a slender piece, but it works!

      Ha, ha! I could probably count up the calories, but it won’t be pretty. My philosophy is if you have to ask, it’s not in your budget, lol!

    What a clever idea to decorate a cake! I bet it will work just as well for a birthday party if you change the colour of the coconut to suit any party theme. By adding small plastic toys or figures made from modeling paste according to the theme, this cake will be a big hit amongst the party guests.

      Hi Brandi! Take the ribbon off first. It’s pretty easy to cut as the Kit Kat bars are only two pieces together, so I cut a slice between them. It makes for a bit smaller piece than normal or you can take some of the Kit Kat bars off a section right before you cut it, if you want a bigger piece.

      You could probably pipe fake grass on with icing using Wilton tip #233. It’s designed to pipe out small strands of icing that look like grass. Or maybe try just a dirt route by crushing oreos on top to look like the dirt!

      Hi Marybeth! I’ve never tried it with cool whip, but my guess is that it wouldn’t support the weight. Since cool whip is so light, I think you’d have the Kit Kats moving around and I’m not sure the toppings would hold up without a sturdy wall of Kit Kats.

    I don’t see how you used two layers and mini kit kats. Weren’t the layers way to tall. I’m in the middle of making this now and with the reg. Size kit kats I only need one layer of cake. Lol I’m so confused !

      Hi Cassie! I used the snack size kit kats. You can see in my picture how the grass comes up a bit where the top layer is “domed” on the top. From pictures I saw using regular kit kats, they stuck up a lot so I opted for the snack size. If you were making the cake that has the design of filling up the “basket” with M&M’s, you might want the taller ones. But the snack size works great for this Easter version.

    It seems that if you broke each KitKat in two they would go on just as easily but you could cut larger slices of cake. Look at me wanting bigger pieces already.

      That particular one I bought at Walmart. Just about any ribbon would work.

    thanks but I dont think they have walmart in england but i’ve been looking online and can’t find any multi coloured ribbon, only single colours, do you know any website I could buy some from?

      I personally haven’t purchased ribbon online. Amazon.com may have some or Nashville Wraps (http://www.nashvillewraps.com) is a good place to try. I’m not sure of where they ship though.

    i love this cake design but was wondering how well the kit kats stick? They seem like they might keep falling off. Is the trick in the type of frosting?

      They stick pretty well and the type of frosting doesn’t matter. The ribbon helps to keep them in line as well.

    Hi 🙂 your cake is awesome… I am
    planning on making it for Easter.. I bought
    all the ingredients.. Including the 22 snack size kit kats..
    I’m just worried that a two Layered cake with frosting in
    the middle will be so much larger then the size of the small kit kat
    .. Are they Doubled under the ribbon? But then
    you would need 44? I’m just worried that I will not
    have enough and I will be sending my husband
    scrambling on Easter morning looking for kitkats..

      Thanks, Theresa! What is listed in the ingredients and what you see in the pictures are what I used. I can’t remember if I used an 8″ or 9″ pan for the cakes though. That is a double layered cake and I used the specified Kit Kats. They aren’t doubled. I’ve seen some people use regular Kit Kats, but they really stick up. You could always use those and put more coconut on top to fill it up.

    Can you put the coconut grass on earlier in the day ? Just wondering if it stays nice or gets soggy or anything?

      Hi Sandy! Yes, you should be able to put the coconut grass on earlier. It shouldn’t get soggy for several hours.

      Hi Sandy! Yes, eventually they will, but should be good for several hours. I’ve never had a cake last long enough for them to get soggy though!
